Balsamic vinegar reduction is a thick glaze with a sweet-and-sour taste that goes perfectly with both savory and sweet dishes. Preparing it is very easy, it takes just about 15 minutes: bring the balsamic vinegar to boiling point in a pan (on a low heat, to prevent it from burning), add sugar or honey and let the liquid evaporate until you get a glaze. Before using it, filter it and let it cool.
If you want to obtain a more neutral flavor, you can also use starch instead of sugar, but you can also enrich it with spices, such as cinnamon.
