Rigatoni with Broccoli by Chef Sandro Fioriti
Serves 4
Ingredients
16 oz. Rigatoni pasta
1 garlic clove
½ glass extra-virgin olive oil
1 cup of white wine
chopped Italian broccoli
chopped Italian sausage
Parmigiano Reggiano
Method
Cook the rigatoni in a large pot filled with salted, boiling water.
Sauté the garlic clove in a saucepan with olive oil until caramelized. Then add chopped broccoli and sausage.
After 5-6 minutes, add white wine and a small cup of hot boiling water used for the pasta.
Strain the rigatoni.
Pour the sausage and broccoli mix over the pasta.
Sprinkle pasta with Parmigiano Reggiano.
Serve warm.
