Being at home without being able to exercise outdoors or in a gym – as we used to do until just a few weeks ago – forces us to reduce our daily calorie intake to avoid accumulating any unpleasant extra pounds. For this reason, we suggest a recipe that’s easy to prepare with just a few calories – tasty and satiating at the same time. Rice with cauliflower, a combination of grains and vegetables, is perfect for a healthy diet without too much fat.
Cauliflower and all its properties
This vegetable belongs to the cruciferous family and it’s rich in mineral salts, including potassium, phosphorus, calcium, and magnesium – all useful, among other things, for regulating the nervous system and blood pressure. In addition, cauliflower is a great source of vitamins A and C, which help to strengthen the immune system and slow down cellular aging. This vegetable also has anti-tumor, liver-purifying, and anti-inflammatory properties. In short, it’s a food that we should always have in the pantry!
Rice with cauliflower and turmeric
In this recipe for rice with cauliflower, add some turmeric, a spice from a plant in South Asia, with a yellow or orange root. The most important active ingredient of turmeric is its anti-tumor properties that reduce the inflammatory processes that develop in the body. In fact, turmeric is the main ingredient of Indian curry and it’s used as a spice for meat, fish, vegetables or grains – especially rice for a dish with more flavor. In this dish, it also goes very well with cauliflower.
The Recipe: Rice with Cauliflower
Ingredients:
11 oz Carnaroli rice
1/2 cauliflower
1 clove of garlic
1/2 cup white wine
2 oz butter
Parmesan cheese
Extra-virgin olive oil
2 US quarts vegetable stock
Turmeric (optional)
Method:
First, cut the cauliflower into smaller florets. Wash them and set aside.
Sauté the peeled garlic in a pan with a drizzle of olive oil. Once ready, remove garlic from the pan.
Add the cauliflower florets and brown them for a few minutes.
Add the rice and toast it for two minutes. Then add the wine.
Once the wine has evaporated, add a few ladles of hot broth (a little at a time) until the rice is ready. This should take about 16 minutes.
In the end, add the turmeric if you like.
Once the rice is ready, blend it with parmesan cheese and serve.
