Ingredients
2 celery stalks, 1 thistle, 2 yellow carrots, 2 hearts of romaine, 1 fennel bulb, cut into wedges, 1/2 purple cauliflower, 1/2 Romanesco broccoli, 1 broccoli floret, 8 baby carrots, 8 turnips, 8 radishes, 1 head of radicchio, pea shoots
Serve with an herbal vinaigrette and hummus (recipe below).
Easy hummus recipe
Blend nine oz boiled chickpeas with three oz. tahini (sesame cream), one oz. extra virgin olive oil, 1 oz lemon juice, a small piece of garlic to taste, salt and pepper. To obtain a creamy consistency, add a little water as needed.
